How to Make the EASIEST Strawberry Croissants

Ingredients

  • 1/4 cup sugar

  • 1/8 cup cornstarch

  • Pinch of salt

  • 2 egg yolks

  • 1 cup half and half

  • 1 tablespoon unsalted butter

  • 1 teaspoon vanilla extract

  • Additional Ingredients:
  • Fresh strawberries

  • Powdered sugar

  • Croissants (fresh or frozen)

Directions

  • Make the Pastry Cream: In a saucepan, whisk together the sugar, cornstarch, and salt. In another bowl add the egg yolks and half and half, whisking until smooth.
  • Stir in the butter and place the saucepan over medium heat and cook, stirring constantly, until the mixture thickens and comes to a boil. Remove from heat and and vanilla extract until well combined. Transfer the pastry cream to a bowl, cover with plastic wrap (pressing it directly onto the surface to prevent a skin from forming), and chill in the refrigerator for at least 2 hours, or overnight.
  • Assemble the Strawberry Croissants: Once the pastry cream is chilled and set, it’s time to assemble our treats! Slice the croissants horizontally, but be careful not to cut all the way through. Spread a generous layer of pastry cream on the bottom half of each croissant. Top with sliced fresh strawberries, and then gently press the top halves of the croissants down to sandwich everything together.
  • Serve and Enjoy: Dust the tops of the croissants with powdered sugar for a touch of sweetness and extra flair. Serve your Strawberry Croissants immediately.
