Happy weekend! Who else feels like the weekend is the perfect time to catch up on life and indulge in some delicious eats? Lately, John and I have been venturing out discovering new restaurants and food along the way.

One dish I had at a recent gathering was Bánh Mì Nướng Tôm, aka Vietnamese shrimp toast. It was so scrumptious that I just had to come home and put my own spin on it!

So, today, I’m excited to share my version with you – Vietnamese Shrimp and Crab Toast! Now, don’t fret, my friends. We’re keeping things accessible and wallet-friendly by using imitation crab, but if you’re feeling fancy and have fresh crab on hand, by all means, live your best life!

Oh, and here’s a little hack – we’re going to chop everything in the food processor to save time, but if you don’t have one, no worries! A good old-fashioned knife will do just fine. And to make things even easier, we’re whipping this up in the air fryer! Of course, you can also bake it in the oven, just keep an eye on it as it cooks faster.

This appetizer is perfect for your next gathering or party platter, and trust me, it’s a crowd-pleaser! So, let’s dig in and get ready to impress your guests with some seriously tasty and easy shrimp and crab toast!

How to Make Bánh Mì Nướng Tôm Cua (Shrimp & Crab Toast)

Ingredients

  • 1 French baguette

  • 1/2 lb shrimp

  • 4 sticks of imitation crab

  • 1/2 small yellow onion

  • 1 teaspoon minced garlic

  • 1/3 cup mozzarella cheese

  • 1/3 cup Japanese mayo

  • 1/4 teaspoon salt

  • 1/2 teaspoon black pepper

  • 3/4 teaspoon brown sugar

  • Green onions ( for garnish)

Directions

  • Prep the Ingredients: Preheat your air fryer to 350°F. Meanwhile, roughly chop the shrimp, imitation crab, yellow onion, and garlic. If using a food processor, pulse the ingredients until roughly chopped. Transfer the mixture to a mixing bowl.
  • Season and Mix: Add the mozzarella cheese, mayo, salt, black pepper, and brown sugar to the mixing bowl with the chopped shrimp and crab mixture. Give everything a good mix until well combined.
  • Assemble the Toast: Slice the French baguette into diagonal slices, about 1/2 inch thick. Spread a generous amount of the shrimp and crab mixture onto each slice of bread, covering it evenly.
  • Air Fry or Bake: Working in batches if necessary, place the assembled toast slices into the preheated air fryer basket. Cook for 12-14 minutes, or until the toast is golden brown and crispy.
  • Garnish and Serve: Once cooked, remove the shrimp and crab toast from the air fryer and transfer them to a serving platter. Garnish with chopped green onions.
