Easy Mini Lemon Tarts 🍋

Don’t worry the zest is yet to come! I love desserts so much! I always have room for it no matter what kind of meal I just had. One of my favorite type of desserts are the fruity ones!

This lemon tart recipe I’ve made multiple times in a big size. Basically the pie size or even the square pans. But I wanted to try making it in a smaller size this time using premade granola crusts. But not just any sized crusts, mini ones! I’m a sucker for mini size desserts, because I think they’re so freaking cute.

These are so easy to make, and I love how the citrus pairs so well with the sweet condensed milk. And make it even easier you can buy Cool Whip or premade whip cream! It’s really that easy and these taste super fresh.

Ingredients

  • 6 mini graham cracker crusts

  • 1 container cool whip/whipped cream

  • 1/2 c lemon juice

  • 1 tsp lemon zest (+ some to top)

  • 1/2 can condense milk

  • 4 egg yolks

Directions

  • Mix together condense milk and lemon juice
  • In a mixer, combine egg yolks and lemon zest
  • Whisk together both mixtures
  • Pour evenly into 6 graham cracker crusts
  • Bake 350 F for 12-13 mins
  • Once cooled, top with whipped cream, lemons slices and lemon zest
