Korean Chili Noodles with @KPOPFoods & #StopAsianHate

Anyone that follows me on socials know exactly how I feel about the #StopAsianHate topic. I’m sure you’ve seen and most definitely heard, about the attacks on Asians (specifically elderly ones) in broad daylight. How these attacks have escalated greatly within the past year because of COVID and xenophobia within the country. We must speak up & use our own voice against this unnecessary and senseless violence. We must stand for those who can’t.

That’s why I am so honored to be asked to be apart of the #SendSaucyNoods challenge from @KPOPFoods! The mission of KPOP Foods is to highlight the flavors of Korean food and spread joy and bring people together through it. For every entry into their #SendSaucyNoods challenge, they’ll donate $5 to an AAPI organization! How INCREDIBLE is that?!

Korean Chili Noodles with @KPOPFoods

Ingredients

  • 2-3 tbsp KPOP Foods Korean Chili Sauce

  • 2 tbsp dark soy sauce

  • 2 tbsp sugar

  • 1 tbsp water

  • 2-3 garlic cloves minced

  • 1 tbsp veggie oil

  • 10 oz noodles cooked to instruction (I used ribbon noodles)

  • 1/4 cup finely chopped green onions

  • 1/2 cup carrots

  • Optional Garnish: chopped green onions, fried egg, more chili sauce etc.

Directions

  • Mix together Korean chili sauce, dark soy sauce, sugar & water
  • Cook noodles per instructions & drain
  • Heat up oil on med/high, stir-fry garlic & green onions until aromatic
  • Add noodles & sauce. Stir fry 3-4 mins or until most of the liquid is absorbed
  • Add carrots/veggies. Stir fry 1-2 mins
