Super Easy Ube Mochi Waffles (Recipe from my Cookbook!)

Today I’m sharing one of my favorite recipes from my cookbook UBE Mochi Waffles! I like this a lot because it’s super easy, and you can eat it as dessert or breakfast!

The cool part about it is that if you don’t eat it right away you can reheat it again later in the air fryer or oven and it’s just as good!

If you don’t know Ube is a pretty purple yam that is native in the Philippines where it’s used not only for sweetness but also for it’s beautiful vibrant purple color! It kind of taste like vanilla and pistachio and it just goes so well with everything!

For this recipe you can make it entire waffle or the small little ones that I did. You can also top it with any toppings including syrup, powdered sugar and even fruit! The possibilities are endless!
