	•	1¾ cups (220g) rice flour
	•	¾ cup (90g) tapioca starch
	•	1¼ cups (300ml) warm water 
	•	¾ cup (180ml) full-fat coconut milk 
	•	¾ cup + 1 tbsp (160g) granulated sugar
	•	2 tsp instant dry yeast
	•	½ tsp double-acting baking powder
	•	Neutral oil 

For Coloring/Flavoring:
	•	2 tbsp pandan juice 
	•	1 tsp pandan extract 
	•	2–3 tbsp butterfly pea flower tea 
	•	1–2 tbsp strawberry extract/purée

Turns out green tea isn’t just for sipping 🍵🍪🍋

I used @bigelowtea green tea to flavor these sugar cookies and let me tell you—they’re soft, buttery, and lowkey soothing?? Like edible self-care.

As someone running a one-woman bakery biz, I’m all about brands that lead with purpose. Bigelow has been women-owned and family-run for over 80 years, and they’re a certified B Corp too. That kind of energy just hits different. 💚

Ingredients
    •    2 green tea bags
    •    6 tbsp unsalted butter, melted
    •    ½ cup granulated sugar
    •    1 egg
    •    1 tsp vanilla extract
    •    1 ¾ cups all-purpose flour
    •    ½ tsp baking powder
    •    ¼ tsp salt
    •    Optional: 1-2 drops pandan extract (color)

Optional Lemon Glaze
Mix ½ cup powdered sugar + 1 tbsp lemon juice

Instructions
    1.    Infuse the butter – Melt the butter, then cut open the tea bags and stir in the tea leaves. Let it sit for 5 minutes.
    2.    Mix wet ingredients – In a bowl, whisk the tea-infused butter and sugar until combined. Add the egg and vanilla, mixing well.
    3.    Combine dry ingredients – In another bowl, whisk the flour, baking powder, and salt. Slowly add this to the wet mixture until a dough forms.
    4.    Chill the dough – Wrap the dough in plastic wrap and refrigerate for 30 minutes.
    5.    Roll & cut – Roll the dough to ¼ inch thickness. Use cookie cutters to cut out shapes.
    6.    Bake – Preheat oven to 350°F. Bake for 8-10 minutes, or until the edges are just lightly golden.
    7.    Cool & decorate – Let the cookies cool on the sheet for a few minutes before transferring to a rack. Once cooled add lemon glaze!
