How to Make Pandan Rice Krispies (with Fresh Pandan Extract!)

What is Pandan, you may ask? It’s a tropical plant native to Southeast Asia and is often used in many of our dishes.

They look similar to palm leaves but are much skinner and longer in comparison. You see pandan in many Asian dishes ranging from savory entrees to even sweeter desserts! The possibilities are endless!

For those asking what it taste like, think of a sweet vanilla with a hint of coconut flavor. It’s super subtle but because of the naturally occurring green leaves and pigment, it leaves dishes a vibrant green hue.

I don’t know about you but growing up, I always ate the green desserts first. I just never knew it was an exotic green plant!

Don’t worry if you don’t have fresh pandan available, to be honest unless you live in a warm climate, these will be super tricky to come by, you can also use pandan extract or frozen pandan! I get mine at the local Asian grocery store but you can always find it on Amazon too!

Anyway, I was craving rice krispies one night (cause the best thoughts come at night when you’re hungry af) and thought to myself, why not combine it with pandan?

And ta-daaa! This Pandan Rice Krispie recipe was made. All we needed was some pandan extract and fresh pandan leaves on top of your normal ingredients and you’re set!

Pandan Rice Krispies

Ingredients

  • 5 1/2 cups rice crispy cereal

  • 3 tbsp unsalted butter

  • 1 bag (12 oz) marshmallows

  • 4-5 pandan leaves

  • 2-3 drops pandan extract

Directions

  • Melt the butter on low. Wash and cut the ends of the pandan leaves. Add to the butter and cook for 2-3 mins on low heat. Stir in marshmallows until incorporated.
  • Remove from heat and add rice cereal. Mix until everything is coated.
  • Grease pan with butter. Pour mixture into greased pan and press down gently with saran wrap.
  • Let set for 1 hour at room temp before cutting in squares.
