How to make Hến Xào (Vietnamese Stir Fry Mussels)

Ingredients

  • 1 lb mussels (frozen/fresh)

  • 6 garlic cloves

  • 1 in ginger

  • 2 green chilis (can also use red for more spice)

  • 1 shallot

  • 2 green onions (sliced)

  • Sauce
  • 2 tsp sugar

  • 1 tsp chicken boullion

  • 1/4 tsp salt

  • 1/4 tsp black pepper

  • 1 1/2 tbsp oyster sauce

  • 1 tsp dark soy sauce

  • 1 tsp regular soy sauce

  • 2 tbsp avocado oil

Directions

  • In a food processor, chop up garlic, shallot, ginger and chili peppers (you can also just chop these up manually if you don’t have one)
  • Rinse mussels to remove any debris and cut out the little hairs (if any).
  • In a pan on med/high heat, add avocado oil. Once it’s hot, add the aromatics and stir fry for 30 secs – 1 min.
  • Add mussels and the sauce and cook for 5 mins. Add green onions and cook for 1 min. Serve with rice or by itself.
