Part 1 was my silky Ube Flan. Part 2? A chewy, bouncy Ube Bánh Bò Hấp. And now, for Part 3, we’re taking it back to basics — with a not-so-basic twist.

We’re making:

Banana bread is one of those classic comfort desserts that gets overshadowed by flashier treats. But let me tell you: when done right? It hits.

Don’t Have Fresh Ube? Let’s Talk Options

Fresh ube is the star here, but if you can’t find it, don’t stress. You can still:

  • Use frozen grated ube (just steam & mash first)
  • Use ube halaya (reduce sugar slightly)
  • Use ube powder (rehydrate in hot water or milk)
  • Use just extract (flavor will be lighter, but it’ll still be cute)

Will it taste the same? Not 100%. But it’ll still be purple, delicious, and worth the effort.

  • ½ cup steamed, mashed fresh ube
  • ½ cup full-fat coconut milk
  • ¼ cup neutral oil (canola, avocado, grapeseed)
  • ¼ cup sour cream or Greek yogurt
  • ¾ cup brown sugar
  • 2 large eggs (room temp)
  • 1 tsp ube extract
  • 1 tsp vanilla extract

  • 1½ cups all-purpose flour
  • ½ tsp baking soda
  • 1½ tsp baking powder
  • ½ tsp salt

Let’s Bake It 🔥

Preheat to 350°F (175°C).
Line a standard 9×5” loaf pan with parchment and grease the sides. (Mini loaves also work — just reduce bake time.)

Blend the mashed ube (cooked), coconut milk, 1/2 tsp vanilla and ube extract (optional) until it’s silky smooth. You’re aiming for:

✅ Step 5: Swirl & Bake


Scoop the batter in a checkerboard layout. 1 scoop regular batter, 1 scoop ube, alternate until there’s no more batter. Swirl 3-4 times.

Add any toppings if you’re feeling fancy — banana slices, turbinado sugar, coconut, nuts… she’s customizable.

Bake for 55–65 minutes, tenting with foil around the 40-minute mark if the top is browning too quickly.

✅ Toothpick test: Should come out with moist crumbs (not wet batter).

Let the bread cool in the pan for 10 minutes.
Transfer to a wire rack and cool completely before slicing.
