OK I feel like Nước Mắm Gừng doesn’t get enough attention. It’s the cousin to the classic Vietnamese dipping sauce nước chấm, but I feel like it does not get enough time in the spotlight!

Nước Mắm Gừng is a traditional ginger & fish sauce based dipping sauce that is used in a lot of Vietnamese cooking. It’s generally served with a lot of chicken dishes as the ginger complements the chicken very well. I made it recently when I made some Instapot chicken Pho and it always hits the spot! It also does well with chicken rice platters or even other chicken noodle dishes.

What I like most about the sauce is it’s very adjustable. So you can add more sugar, lime, or even water to dilute it if it’s too strong according to your taste. Vietnamese Ginger Dipping Sauce: Nước Mắm Gừng

Ingredients

  • 2 in ginger (peeled & chopped)

  • 1 thai chili

  • 1-2 tbsp lime juice (to taste)

  • 1-2 tbsp fish sauce

  • 1 tbsp water (optional)

Directions

  • Add ginger, chili and sugar to a mortar and pestle.
    Smash until juices are relapsed and ingredients are combined
  • Add lime juice, fish sauce, and water. Adjust according to taste
