Well here we are folks, the end of August (and basically summer!) has finally come upon us. Is it too late to create more popsicles? I don’t think so. Especially living in OC the temps here are still 90s in some places. Yikes! But I ain’t mad though. ‘Tis why I moved here.
On to today’s hot topic, GOLDEN KIWIS! If you’ve never had one before I highly recommend you trying some! I came across these living in OC since I’ve never seen them before. I had to score some. The usually are more expensive than their green counterparts but one bite and you will find out why. A pack of 4 golden kiwis can cost you around $10-$12 depending on where you buy it.
Lucky for me, one day while browsing in an Asian Market, I saw a whole box for $7! Wowie! What a deal! So you know me, I scooped up the freshest box I could and took that bad bwoy home. Some fun facts about the golden kiwi:
- More vitamins, fiber and protein than the green ones
- Fewer seeds and smoother, less hairy skin
- Less acidic than the green ones, making them taste much sweeter
So anyways I’m pretty sure the box came with 10+ Kiwis and I couldn’t eat them fast enough raw. So your girl came up with the brilliant idea to freeze them into popsicles! That way the Kiwis can last a bit longer and I’m not forced to shove 7 kiwis down before they spoil. LOL.
I wanted something to contrast the slight tartness of the kiwi (cause some were still tangy) so we added coconut water and bit of sugar for the base. Add a couple slices of kiwi fruit and these were to die for! My mans and pups loved them so much and they are always a great day to cool down during these hot summers.

Golden Kiwi & Coconut Popsicles

4 Golden Kiwis
1 tbsp sugar (more/less to taste)
1 can coconut juice
Directions
- Slice 1 kiwi and dice 3 kiwis
- Add the 3 diced kiwis into a blender, sugar and coconut juice
- Place slices in popsicle molds and pour in mixture
- Freeze for 6 hours or overnight
