Today I’m sharing with you, my mom secret Gỏi gà recipe!
My mom would make this often growing up, especially for events. It’s super easy to put together and super refreshing!
To put together it consist of red cabbage, cabbage, carrots, Vietnamese, coriander, and some chicken! For this, I like using bone in chicken thighs because they’re cheap and they work really well! I just boil them and let them cool to room temp before cutting, you can also shred the chicken as well, but I like to cut it because it’s easier.
For the dressing we’re making a very citrusy, sweet and umami fish sauce mix. My mom secret ingredient is adding orange juice as well as lime juice for that nice citrus kick! You can adjust the sauce to your taste before you pour it into the salad as well. It’s very forgiving.

How To Make Gỏi Gà (Vietnamese Chicken Salad)

3-4 chicken thighs (boiled and cut into thin pieces)
1/2 cabbage (sliced thinly)
1/2 red cabbage (sliced thinly)
1 carrot (shredded)
handful of Vietnamese coriander (roughly chopped)
- Fish Sauce Dressing
8-10 garlic cloves (chopped)
3 birds-eye chilies (chopped)
2 tbsp lime juice
1/4 c orange juice
3 tbsp sugar
3/4 c warm water
2-3 tbsp fish sauce
- Toppings
1/4 c crushed peanuts
Directions
- Boil chicken thighs until cooked 25-30 mins. Set aside to cool and cut into thin pieces.
- Cut all the veggies and mix it together into a bowl.
- To make the dressing, add the sugar and warm water to a bowl. Mix until sugar dissolves and the add chilies, garlic, lime juice, orange juice and fish sauce to taste.
- Pour dressing over salad and mix throughly. Top with crushed peanuts before serving. Refrigerate any leftovers.
