Ingredients

  • 2 medium-sized orange sweet potatoes

  • 2 medium-sized purple sweet potatoes

  • 1 1/2 cup of tapioca starch

  • 1 1/2 tbsp honey

Directions

  • Begin by washing, peeling, and cutting both the orange and purple sweet potatoes into small, equally sized chunks. This will ensure even cooking. Steam them for about 15-20 minutes or until they become soft and easily mashed with a fork.
  • While the sweet potatoes are still warm, mash them separately into a smooth, lump-free consistency. Gradually add tapioca starch (3/4 cup each) to each mashed sweet potato. Knead the dough gently until it’s smooth and no longer sticky. Adjust the amount of tapioca starch if needed.
  • Pinch off small portions of the orange and purple sweet potato dough and roll them into a log, then cut them into small bite sized pieces. Bring a pot of water to a boil, then drop them in. Cook for a few minutes or until they float.
  • Use a slotted spoon to remove the balls and place in an ice bath to stop the cooking. Drain and mix in honey. Taiwanese orange and purple sweet potato balls are best enjoyed fresh. Serve them as a snack or add on to a dessert.
