Strawberry Banana Muffins (Airfryer/Oven)

Strawberry season is coming up soon here in SoCal & it’s gonna be a wild one. Growing up in one of the coldest states in the US (Minnesota for those that are wondering), things like berry season doesn’t happen to folks like us (we still technically have snow in some places). So it’s one of the reasons why I’m so excited to finally be living in a state where produce flourishes!

Now back to the strawberry dealio. I had some chilling in my fridge and some bananas that were maybe a little too ripe. lol. So an idea struck. What a better combo than strawberry banana?! I wanted the strawberry to be the main star here, so that’s why there’s a solid amount of berries in here, but the touch of banana adds a sweet component to the muffins. Feel free to add more or less sugar to your liking or even try other fruits/berries!

As always, I have an oven version if you don’t have an airfryer. One note though, is that I used the mini muffin tins for the airfryer so the baking times will vary depending on how big you muffins are. So I would check on it after 22 mins or so and insert a toothpick in it. Once it comes out clean, you’re gucci.

1 serving = 1 mini muffin

Ingredients

  • 1⁄4 cup unsalted butter (melted)

  • 1⁄2 cup almond milk

  • 1 egg

  • 1/2 tsp vanilla extract

  • 1 3⁄4 cups all-purpose flour

  • 1⁄2 tsp salt

  • 2 tsp baking powder

  • 3⁄4 cup sugar

  • 9-10 fresh strawberries, chopped

  • 1 banana, thinly sliced

Directions

  • Mix together your dry ingredients: flour, salt, baking powder & sugar
  • Add your strawberries & banana to the dry mixture
  • In a mixer, mix together the melted butter, almond milk, egg & vanilla
  • Fold in your berry & flour mix into your wet ingredients
  • Fill mini muffin tins about halfway
  • Airfry 320 for 10-12 mins or bake at 375 for 25-30 mins or until toothpick inserted comes out clean
