The EASIET Pandan Waffle (Bánh Kẹp Lá Dứa) Recipe!

Hey guys happy September! I can’t believe it’s starting to become fall soon! Also it’s my favorite month because it’s my birthday month! This year I will be turning 29 so it will be the last year of my 20s which will be interesting.

Now today we’re making Bánh Kẹp Lá Dứa (Vietnamese Pandan Waffle) ! This is probably one of my favorite treats/dessert. I know what you’re thinking, a waffle for dessert? Well our pandan waffle isn’t your average breakfast staple. These waffles have a crunchy exterior and super chewy interior. they’re also infused with Southeast Asian flavor such as Pandan and coconut! The pandan is what gives it a beautiful green color.

Now if you don’t know I work a full-time job so I like convenience. So I’m always on the lookout to saving some time when I make food. So one of my favorite mixes to use for this is from QVF! To be honest you don’t even need a recipe for this but I’m just gonna share it this is the one that’s on the container.

The EASIET Pandan Waffle (Bánh Kẹp Lá Dứa) Recipe!

Ingredients

  • 4 1/2 c Pandan Waffle mix

  • 2 c water

  • 2 eggs

  • 1/3 c canola oil

  • Cooking spray

Directions

  • Mix waffle mix, water, eggs and canola oil together. Let sit for 1 hour at room temp for batter to bloom.
  • Lightly spray your waffle maker and pour 3/4 – 1 c of batter (depending on waffle maker size). Cook for 5 mins or until waffle maker signal it’s done.
  • Let it cool on wire rack for 5 mins before serving. Store in airtight container. (To reheat for later, I highly recommend putting it in the airfryer for a few mins!)
