Grilled Salmon Spring Rolls with the NEW Hamilton Beach Indoor Grill!

Did SALMON say spring rolls?

I think spring rolls are one of my favorite appetizers whenever I go into a Vietnamese restaurant. The only issue was that often times they were mostly packed with too much noodles and veggies and not enough protein. So one of my favorite meals is to make it at home.

The cool part about spring rolls is the flexibility of it. You can put almost anything in it as long as you have some veggies or vermicelli noodles as a base! The OG or original Vietnamese spring rolls usually come with pork belly and shrimp but today we’re making it with grilled salmon!

I love the idea and taste of grilled foods but setting up and cleaning the grill is such a hassle. Especially when you cook for two people, it’s often not worth it and time consuming. Enter in Hamilton Beach’s NEW Indoor Grill! I was reached out by their team to try out their new grill and it is INCREDIBLE.

Not only is it temp controlled, it also produces the most perfect sear every time! It also doesn’t produces as much smoke as a tradition grill does. So living in an apt complex, that got some brownie points. After cooking with it several more times, I am obsessed and will be making more recipes in the future!

Grilled Salmon Spring Rolls

Ingredients

  • 1 lb salmon fillet

  • 1/4 tsp salt

  • 1/4 tsp black pepper

  • 1/4 tsp garlic powder

  • 1/4 tsp onion powder

  • Fillings:
  • Vermicelli Noodles (boil to package directions)

  • Lettuce

  • Carrots (Julienned)

  • Cucumber (Julienned)

  • Nuoc Cham Dipping Sauce:
  • 2 1/2 tbsp sugar

  • 2 tbsp warm water

  • 2 tbsp fish sauce

  • 1 tbsp lime juice

  • 4 garlic cloves (minced)

  • 1 birdseye chili (sliced)

Directions

  • Season salmon with salt, black pepper, garlic powder, & onion powder
  • Heat up Hamilton Grill to 350 degrees and spray with nonstick cooking spray
  • Cook Salmon for 5 mins, then flip and cook for another 10 mins
  • Assemble your rolls: Wet your rice paper and top with vermicelli noodles, lettuce, carrots and salmon
  • To make dipping sauce: combine all ingredients under dipping sauce section to taste (add more sugar if you like sweet/lime if more tart)
