Can you believe we’re already halfway through March? Time really does fly.
If you’ve been following my culinary adventures for a while, you’ll know that I have a bit of a soft spot for pandan. It’s this incredible plant native to Vietnam that has this amazing flavor profile – think vanilla with a hint of coconut.
Recently, I stumbled upon some fresh pandan leaves, and I just couldn’t resist! You see, here in the US, pandan leaves are usually found frozen, so getting my hands on the real deal was a game-changer.
And you know what I love even more? Making delicious Vietnamese dishes that are both convenient and easy.
So today, we’re whipping up a batch of Pandan Sticky Rice, also known as Xôi Lá Dứa, right in the rice cooker! Traditionally, Xôi Lá Dứa is made by steaming the rice, but trust me – the rice cooker method makes it so much simpler! Oh, and if you can’t find fresh pandan leaves, no worries – you can use the frozen ones or even pandan extract! Let’s get cooking!
How to Make Pandan Sticky Rice (in a Rice Cooker!)

3-4 fresh pandan leaves (or frozen ones)
2 cups sticky rice (soaked in water overnight or for at least 4 hours)
1 cup coconut milk
1/2 cup water
1/2 teaspoon salt
1 teaspoon vegetable oil
1 teaspoon pandan extract
- Toppings:
Shredded coconut
4 tablespoons peanuts
2 tablespoons sesame seeds
3 tablespoons sugar
1/4 teaspoon salt
Directions
- Prep Your Pandan: Rinse the pandan leaves thoroughly and place them at the bottom of the rice cooker pot. This will help release their aromatic flavor as they cook.
- Rice Cooker: Drain the soaked sticky rice, mix in the pandan extract then transfer it to the rice cooker. Mix the coconut milk, water, salt and vegetable oil. Place in rice cooker on top of pandan leaves.
- Let It Cook: Allow the rice cooker to work its magic and cook the pandan sticky rice until it’s tender and fluffy. You will cook it twice. After the first time, fluff up the rice and cook one more time. This typically takes about 20-30 minutes, depending on your rice cooker.
- Toppings: While the rice is cooking add the peanuts, sesame seeds, sugar and salt in a food processor and blend (you can also smash them in a mortar or mix it if you don’t have either.) Serve rice with coconut flakes and peanut/sesame mix.
