How to Make Xôi Gấc (Vietnamese Red Sticky Rice)

Chúc mừng năm mới!! It’s almost lunar new year! One of my favorite recipes to make during Tết is Xôi Gấc also known as Vietnamese Red Sticky Rice!

In Vietnamese tradition the color red symbolizes good luck, so we often served this red sticky rice to bring in luck for the new year. 

This recipe is super simple. It mainly consist of sticky rice and Gấc fruit to give the classic red hue to the rice.

Gấc fruit isn’t common in the US but luckily for us, you can find this in the frozen section of Asian markets all ready for you to use. It comes in a little jar like this. All you have to do is defrost it and add it to the rice before cooking.

Also, this is my first time wearing an áo dài (traditional Vietnamese garment) in many years. Cause why not go all out for the culture?

How to Make Xôi Gấc (Vietnamese Red Sticky Rice)

Ingredients

  • 3 c glutinous rice

  • 3/4 c gac fruit

  • 2 tbsp shaoxing rice wine

  • 3/4 tsp salt

  • 2 tsp oil

  • 2 tbsp sugar

Directions

  • Soak rice in water overnight or for 3-4 hrs. Strain the rice.
  • Mix the rice wine, gac fruit, salt and oil together for 2-3 mins. Add to the rice and mix throughly. Let sit for 20 mins.
  • On med/high heat, steam the rice for 20 mins. Once time is up, sprinkle the sugar in the rice, fluff up and mix. Steam again for 10 mins. Fluff up and serve!
