I can’t believe fall season is officially here! With the colder weather coming it reminds me of all the comfy homemade dishes I’ve had growing up with a kid. One of the dishes is Sườn Ram Mặn (a.k.a. Vietnamese Caramelized Pork Spare Ribs).
This is an easy weekday meal. It’s a sweet and savory pork rib recipe and it goes so well with rice and cucumbers. All you need is some pork spareribs and most of the seasoning is already available at home. The only exception is coconut water or juice, but you can use any brand found at your local market.
I like to par boil the ribs first to remove any impurities, so what you do is you boil it for about five minutes and then rinse it with cold water. Then you add all the yummy seasonings and braise it for about 25-30 minutes!
To give it a dark caramel color we are caramelizing some sugar and oil. If it’s your first time doing this, don’t worry it takes a little bit of practice but you will get it! And if it’s not dark enough, I’ve added a little bit of dark soy sauce in the recipe so that it guarantees a rich brown caramel color! So win-win.
My Easy Sườn Ram Mặn Recipe (Vietnamese Caramelized Pork Spare Ribs)

1 1/2 lb pork spare ribs (cut in sections between the bones)
1/2 onion (diced)
1 green onion (sliced, separate white and green parts)
2 tbsp minced garlic
3 tbsp fish sauce
1 tsp dark soy sauce
3/4 tsp black pepper
2 tbsp sugar
1 tbsp sunflower oil
1 c coconut juice
Directions
- Parboil ribs for 5 mins. Rinse in cold water to remove impurities. Marinate ribs with fish sauce, dark soy sauce and black pepper for 10 mins.
- On med heat in a pan, cook oil and sugar until dark brown 4-5 mins. Add onions and white parts of green onions, cook for 2 mins.
- Add ribs and coat in sauce. Add coconut water and simmer (with lid) for 25 mins.
- Cook for 5 mins without lid or until sauce thickens. Garnish with green onions. Serve with rice.
