The Easiest Rainbow Veggie Chips (In the Airfryer!)

Chip chip hooray! I always love using veggies that are in season. I feel like it’s such a great way to freshen up your palate and to use what is growing right now. I recently got my hands on some beautiful fresh veggies (they’re organic too!) and I couldn’t think of a better way to highlight their colors, then to create a recipe using them.

So I got this bunch of gorgeous rainbow carrots. I had never seen this before in my life, let alone use them. The colors are so vibrant. I got purple, yellow and orange ones! I also got some sweet potatoes and some beautiful purple sweet potatoes. So I wanted to create a simple recipe with them. What a better way than with an air fryer?

You don’t even have to have any fancy tools or a mandolin. I just slice these by hand and it didn’t take that long at all! You can also use any neutral oil to coat them in. I got this delicious avocado oil that I’ve been dying to use. But any neutral oil will do.

Ingredients

  • 1 sweet potato

  • 1 purple sweet potato

  • 1 yellow carrot

  • 1 purple carrot

  • 2 tbsp avocado oil

  • salt

  • black pepper

  • onion powder

  • garlic powder

Directions

  • Slice your potatoes thinly and place them in a bowl
  • Run them under cold water until the water runs clear
  • Dry off the potatoes
  • Slice the carrots thinly and place into a bowl
  • Split the avocado oil in half between the two bowls
  • Add a solid dash of each seasoning into the bowl (see video) and mix
  • Place slices on top of each other in airfryer basket
  • Airfry @ 320F for 22-25 mins flipping every 5 mins
  • Set on a rack to cool. Eat asap!
