Vietnamese Street Food: Mỡ Hành Razor Clams (Airfryer Edition)

In Vietnam, a lot of Street Food is also referred to as Nhau. It means ”together” in Vietnamese but also refers to drinking food. Or food that you turn up and crave immediately at 11pm-2am LOL. There is so much vast variety of dishes that comes to mind when it comes to Vietnamese Street Food but none other than grilled proteins.

I recently went to the Asian Garden Night Market in Westminster, CA and was so stunned and INSPIRED by all the Vietnamese Cuisine there. The culture and vast aromas of delicious entrees and various desserts had a girl DROOLING! It was super cool to be able to visit something reminiscent of the street food vendors in Vietnam when I was younger. But don’t take my word for it. Here the VLOG and post on my trip to the Vietnamese Night Market!

Back to the recipe, for those that have never seen it before Mỡ Hành translates to Scallion Oil and Vietnamese people LOVE it. We slather it on anything, beef, shellfish and even corn! But that’s a story for another time. Today we’re recreating those Grilled Clams in the Airfryer! I know, shocking huh?

For the clams today, I’m using frozen razor clams. I look a little weird tbh but they kinda look like thick fries…but like in a clam form. LOL. Also it’s rare to find them fresh and most likely quite expensive so here we are! There are two versions that I’ve seen, ones that are long like your hands and these ones, which are shorter and more like finger length. Either works and even other clams work for this recipe, I would just adjust cooking times depending on the clams you use.

They kinda look like a nightmare but I promise they’re delicious. Just make sure once you defrost your clams, you clean them because depending on where they came from, there could be sand or clam shell pieces inside. So you definitely want to wash and clean them beforehand if they aren’t.

But just to be safe, you should still wash them lol. If using fresh clams, I would let them soak in fresh water for a few hours so they spit out anything they may be holding inside.

Ingredients

  • 1 lb Razor clams (or sm/med clam of choice)

  • 1/8 c veggie oil

  • 3-4 green onions (chopped)

  • 1/4 tsp sugar

  • Tobiko

  • Crushed Roasted Peanuts

  • Fried Shallots

  • Sriracha

Directions

  • Head up oil and add green onions. Add sugar and stir-fry for 1-2 mins.
  • Clean clams and Airfry at 350 degrees for 6-7 mins
  • Top with Mo Hanh (Scallion Oil), Tobiko, peanuts, fried shallots
  • Finally add as much sriracha as you like!
