How to Make Matcha Cheesecake Cups

Hi guys! Today we’re whipping up something super cute and delicious – Matcha Cheesecake Cups!

Growing up, I was always a huge fan of cheesecake, but let’s be real, one whole cheesecake can be a bit too much for just John and me. So, I thought, why not make adorable mini versions? I found these cute little parfait cups at the dollar store (well, $1.25 store now – thanks, inflation 😢), and I couldn’t resist. I got a set of 6 for a total steal.

And to make these mini cheesecakes a bit extra, I decided to go with a matcha version because my little sister recently brought me some matcha straight from Japan! I haaaaad to do it justice. Let’s get started, and don’t forget to let me know if you try out the recipe below!

How to Make Matcha Cheesecake Cups

Ingredients

  • For the Crust:
  • 1 cup nilla wafers/graham cracker crumbs

  • 4 tablespoons melted butter

  • For the Cheesecake Filling:
  • 1 cup cream cheese (softened)

  • 1/2 cup powdered sugar

  • 1 cup heavy cream

  • 2 tablespoons matcha powder (adjust to taste)

  • 1 teaspoon pandan/vanilla extract

  • For Garnish:
  • Matcha powder for dusting

  • Fresh berries (optional)

Directions

  • Make the Crust:
    – In a bowl, mix the graham cracker crumbs, sugar, and melted butter until well combined.
    – Press the mixture evenly into the bottom of your parfait cups to form the crust. Use the back of a spoon to pack it down firmly.
  • Prepare the Matcha Cheesecake Filling:
    – In a large mixing bowl, beat the softened cream cheese and powdered sugar together until smooth and creamy.
    – Add the heavy cream, matcha powder, and pandan extract. Continue to beat the mixture until it becomes thick and fluffy.
  • Assemble the Cheesecake Cups:
    – Spoon or pipe the matcha cheesecake filling over the crust in each parfait cup, filling them to the top.
    – Smooth out the tops with the back of a spoon or a spatula.
  • Chill the Cheesecake Cups:
    – Place the filled cups in the refrigerator and let them chill for at least 2-3 hours, or until the cheesecake filling is set.
    – Once the cheesecake cups are set, garnish them with a light dusting of matcha powder, and fresh berries if desired.
