Originally born & raised in a small town in Minnesota, I grew up with a lot of traditional Vietnamese food because of my parent’s home cooking.

Let’s Xèo away together! 🟡🔥 Bánh Xèo is a Vietnamese street food staple—a crispy, savory crepe with turmeric, coconut milk, and a savory filling of shrimp, pork, my personal fave…squid. It’s served with lettuce, herbs, and an addicting nước mắm dipping sauce.

Ingredients:
1 packet (about 14 oz) Bánh Xèo pre-mix
1 tsp turmeric (included with pre-mix)
1 1/2 cups coconut water
1 cup sparking water
1 can (13 fl oz) coconut milk
1 green onion (chopped)
1/8 tsp salt (optional)

Fillings:
1/2 lb pork belly or pork shoulder, thinly sliced
1/2 lb shrimp, peeled and deveined
1/2 lb squid, cleaned and thinly sliced
1 small yellow onion, thinly sliced
2 cups bean sprouts (optional)
Veggie oil (for frying)

Serving:
fresh lettuce, cilantro, herbs etc
Vietnamese dipping sauce (nước mắm)

1 package Bánh Bò mix
1 package of yeast
1 1/2 cup + 2 tsp coconut milk

Coconut Syrup
2 cups coconut juice/water
1 cup sugar

Growing up, bánh da lợn was my go-to at any Vietnamese bakery. You can’t miss the vibrant pandan and chewy mung bean layers. 🟢🟡
