Today’s recipe was highly requested! We are making Cá Hồi Nướng (aka Vietnamese Baked Salmon) for spring rolls!

This was inspired by a lot of Cá Nướng restaurants in Orange County. Usually they use a whole catfish for this but I wanted to make an easier version at home using salmon fillets. This way you don’t have to worry about buying a whole fish and cleaning it and deboning it. You can just use a salmon fillet that’s ready for you!

I also cooked it in the air fryer because it’s so much faster and easier but you can also bake this in the oven as well.

There’s two dipping sauces that you can use for the spring rolls. In the video I go over my favorite, which is Mắm nêm (fermented fish sauce).

This is the brand I like using because some of them are a little too salty, but this one is a nice balance. If you don’t want to go for the dank sauce, I highly recommend using nước chấm! I’ve linked the recipe as well.

How to Make Cá Hồi Nướng for Springrolls (Vietnamese Baked Salmon)

1/2 lb salmon filet
5 garlic cloves (minced)
1 small shallot (minced)
3-4 green onions (green part sliced – white part minced)
1 tbsp sugar
2 tsp soy sauce
1 1/2 tbsp oyster sauce
1 tsp sesame oil
1 tsp lemon juice
1/8 tsp black pepper
1/8 tsp salt
- Other Ingredients/Fillings
1 tbsp veggie oil
Vermecelli noodles (cooked to package instructions)
Rice Paper
Lettuce
Cucumbers
Fried Shallots
Crushed Peanuts
- Sauce
1 c pineapple (blended)
3-4 tbsp Mắm nêm (to taste)

Directions
- In a food processor, chop up garlic, shallot, and white parts of green onions. Add to a bowl and mix in sugar, lemon juice, soy sauce, oyster sauce, sesame oil, salt and black pepper.
- Marinate salmon with mixture for about 10 mins. Airfry at 390F for 12 mins (or bake in oven at 375F for 15-17 mins) or until salmon is cooked all the way through.
- In a pan heat up oil and stir fry green onions for 1-2 mins. Topped baked salmon with this scallion oil, crushed peanuts and fried shallots.
- To make Mắm nêm, blend or put pineapple in a food processor. Then mix with Mắm nêm to taste (add more pineapple to be sweeter or Mắm nêm for saltiness)
- Make your spring rolls with – rice paper, vermicelli noodles, lettuce, cucumbers and Đồ Chua!
