Today’s recipe is one of my favorite, and probably one of the easiest Miến Gà!
Miến Gà our version of a Vietnamese chicken noodle soup. It’s one of my favorites because it’s super easy and quick to put together but just as delicious and nutritious. It’s also one of my favorite soups for winter season.
What makes it so unique and special is that it uses mung bean noodles also known as bean thread noodles. Compared to its vermicelli and rice noodle counterparts it’s more clear and chewy! The texture of this noodle is one of my absolute favorite parts of this dish. Make sure when you’re buying these noodles that you see that mung bean is one of the main ingredients because not all noodles are both the same.
The recipe is very forgiving. You basically make the chicken broth, cut or shred the chicken after it’s done cooking and then season the broth to your liking, so feel free to tweak it with the seasonings til you like it!
Finally it’s garnished with some green onions, cilantro, and fried shallots. I like buying my fried shallots because it’s very common here at local supermarkets. But you can also make it too, bonus points to you. 😉
How To Make Miến Gà (Vietnamese Chicken Noodle Soup)

4 chicken thighs
11 c water
1 shallot
5-6 ginger slices
3 green onions (cut white and green parts – slice green part)
2 1/2 tbsp chicken bouillon
1 tsp sugar
3/4 tsp salt
1/2 tsp black pepper
1 tbsp fish sauce
1/4 tsp turmeric
1 pack bean thread noodles (2-3 bundles)

Cilantro (chopped)
Fried shallots
Directions
- Soak noodles in water for 30 mins, then drain water.
- Bring a pot of water to a boil then add chicken thighs, shallots, ginger, and white part of green onions. Let simmer for 30 mins. Scoop off scum that floats to the surface.
- Remove chicken when cooked and let it cool down. Cut or shred chicken into pieces.
- Seasoned broth to taste with chicken bouillon, fish sauce, sugar, turmeric, salt and pepper.
- Place noodles into a bowl, pour in hot boiling broth (this will cook the noodles) and top with chicken, cilantro, green onions and fried shallots.
