Quick Bún Bò Xào (Vietnamese Beef Vermicelli Bowl)

Ahh, we MEAT again! Let’s make some Bún Bò Xào!

Today we are making a Vietnamese Vermicelli bowl with beef. Traditionally this dish is with grilled pork but I don’t have a grill in my apartment anymore so I’m making an easy version where you can make it on the stove top. You can also put it in the air fryer and let it cook the meat as well for easier cleanup.

The cool part about this is you can kind of create your own bowl. It’s like chipotle but Asian. Lol. You start off with a bunch of vermicelli noodles, then top it with your proteins, veggies and Nước chấm sauce. You can find the recipe right here!

My mom often made this dish growing up and it was her go to meal whenever we would go camping. It’s super easy to put together and really refreshing and fulfilling at the same time.

Ingredients

  • Beef and Marinade
  • 1 lb beef/pork/chicken/tofu (any cut, sliced thinly)

  • 1 tbsp avocado oil

  • 1 tbsp brown sugar

  • 1 tbsp dark soy

  • 1 tbsp minced garlic

  • 1 tbsp minced lemongrass

  • 1/2 tsp black pepper

  • 1/2 tsp onion powder

  • 1/2 tsp garlic

  • Toppings
  • 1 pack vermicelli noodles (cook to package)

  • lettuce

  • cucumber

  • crushed peanuts

  • Nước chấm sauce

Directions

  • Mix all the beef and marinade ingredients together and set aside for at least 10 mins
  • Cook noodles and chop veggies
  • On med/high heat cook the beef for 5-7 mins or until its cooked
  • In a bowl: noodles, beef, veggies, peanuts and nuoc cham on the side (or on top!)
