How To Make Crystal Gummies (Japanese Kohakutou Candy)

These have got to be the easiest and most yummiest candies I’ve ever made! To be honest it’s super easy and the hardest part is waiting for it to set.

Agar agar powder is a gelatin made from seaweed. It’s super cool because it’s a nice vegan alternative for that every day gelatin which is I think, made from animal. It is used in a lot of Asian cooking because of its versatility.

What I didn’t know was how easy it was to make used to make crystal candy! If you don’t like the lychee you can substitute it for any other extract or if you don’t add the extract it just taste like crystal rock candy. So it’s good either way.

Crystal Gummies (Japanese Kohakutou Candy)

Ingredients

  • 5 tsp agar agar powder

  • 1 3/4 c cold water

  • 3 c sugar

  • food color

  • 1 tsp Avocado oil

  • 1 tsp extract of choice

Directions

  • Place water into a pot and add agar agar into it. Let it bloom for 5 mins, then whisk to combine.
  • On med heat, whisk and add sugar. Stir for a few minutes until it’s dissolved. Add lychee extract (optional) and whisk. Once it bubbles, remove from heat (5-6 mins total)
  • Oil baking pan and pour in mixture. Add food coloring in little dots and swirl with toothpick.
  • Refrigerate for 2 hrs then cut into shapes with a knife. Let sit at room temp for several days to fully crystalize.
